Knowing About Gluten Free

Feeding a child who has just been diagnosed with celiac disease or other food allergies can be a particularly daunting task for a parent. Many parents of children recently diagnosed with the celiac disease find themselves hurled into a new and rather overwhelming world of "gluten free" and they are sometimes at a loss about where to begin and what to feed their child.

Coming up with recipes and tasty new food combinations are, in many instances a result of trial and error: this at times can become costly as many of the specialty foods used in gluten free recipes come at a premium price. In order to help those who are new on this road, here is a tasty recipe for a gluten free cereal using amaranth grain. Amaranth can be found in many grocery stores and also at health food stores; it is a grain used by many vegetarians and it has many health benefits associated with it.

One teaspoon butter

One summer squash, cut up for sauteing

One zucchini squash, cut up for sauteing

1/4 cup chopped sweet onion

Seasonings to taste

2-3 eggs, lightly beaten

1/3 cup grated sharp cheddar cheese (or whatever sounds good to you)

Amaranth Recipe

  1. If you have purchased a package of amaranth seeds, follow the directions for cooking otherwise proceed to step #2.

  2. In a saucepan, for each cup of amaranth seeds, add 2 1/2 cups of water (it is good to cook a couple of cups at a time - saves you some work).

  3. Bring the amaranth seeds to a boil and simmer for about 20-25 minutes.

  4. When cooked, the amaranth seeds will appear sticky, look like a porridge and be a little thick.

  5. Let the amaranth cool (it can burn you if too hot).

  6. To make a cereal using your amaranth, take a few spoonfuls of the cooked amaranth grain and mix it with milk to bring it to a consistency that you would like to eat. When adding your milk, bear in mind that amaranth will become runny if it is sitting around for a while, so mix it with milk when you are ready to eat it.

  7. Different types of milk can be used to prepare the cereal, healthy milk choices include: soy milk, hemp milk and cashew milk.

  8. Add a blended fruit to your amaranth based on your desired taste (you can use blueberries, blackberries, etc.) The following fruits are particularly tasty in amaranth: strawberries, pineapples, mangoes.

  9. Add a sweetener to your amaranth cereal. If you do not wish to use sugar, healthy choices include stevia, agave nectar and honey.

  10. Once the amaranth grain has cooked, let it cool down: you can separate it into containers and freeze it until needed (this will save you having to constantly keep cooking).

  11. If you freeze your amaranth, just take it out of the freezer in late afternoon and leave it in the fridge overnight and it will be ready for you in the morning.

  12. Microwave your blend of amaranth, milk and fruit once you have mixed it all together. You should only microwave the mixture for a few seconds because it will become watery and it does taste better slightly warmed rather than hot.
